What's going on with my carrots??

Hi, I store mine in the fridge in the cool box bit at the bottom. I take them out of the plastic bag and I line the box with a sheet of kitchen roll, they keep fine for me.
I do exactly the same..
It usually happens because they have been stored at too cold temperatures.. frost has got to them. They go like that if they are cooked and then frozen too!

I find this with all veg this time of year.
I line my fridge drawer with a couple of layers of kitchen roll, then another layer of kitchen roll on top, this keeps moisture down and they last longer.Blessed are the cracked for they are the ones that let in the light

All veg is bought loose here in Cyprus, am struggling to think of anything that comes in bags, other than grapes. I always line salad boxes in fridge with kitchen roll, and all fruit and veg go in there. Don't wash it until needed, but make sure it's all dry before it goes in. Don't really have a problem with mushy carrots here, but we do get bendy ones.
When I lived in the UK, when buying big bags of carrots, I used to save a few for the salad drawer, mainly to use raw as in grated or batons. The rest were prepared for the freezer. Being a lazy kind, rather than blanching, cooling and freezing, I roast carrots in chunks in the oven. Froze on the trays, and then bagged to be used in soups and casseroles or mashed into potatoes. Just a drizzle with some oil (add herbs or spices of your choice if you want), and then about 30-40 mins in the oven at 180C.
Found a recipe for a carrot cake using roasted carrots, which sounds really lovely, must give it a try sometime.
