My last Riverford box came with a recipe for a choc cake which had grated courgettes in it - has anyone tried this and if so what's it like ? I'd like to try but don't want to faff around grating courgttes etc if it's not nice.....

Hiya,
I haven't tried that particular cake, but I have tried courgette cake and it was really delicious.
Well, you get carrot and beetroot cakes, so why not?

Hi
I have made the cake before and wasn't overly keen, but my OH loved it. It isn't as cakey as I expected, but more moist and dense (a bit like bread pudding!).

Hi I made this last Summer..... as I grew courgettes for the first time and there were so many that they needed using up. This cake sounded wonderful.... but I am sorry to say that the cake did not turn out as I had hoped.
It was very heavy and did not taste right..... maybe the courgettes were too damp and needed the water in them removing ..... I think that once the courgettes are grated they can become very watery..... my advice to you is that onced grated, the courgettes need to be wrung (Sp) in a tea towel to get rid of excess water.... hope that makes sense.
I have tried several other recipes from the Riverford web site and they have all turned out very well..... I especially love the Lentil bake.

My mum made the Riverford recipe a couple of years ago. It's not that sweet or chocolatey, but I found it pretty edible and pleasant. As DonnaP says - not very cake-like.
If you fancy a change give it a go. And it's the only time you can eat cake and feel virtuous!
