low/no sugar cake recipes ?

Do any of you lovelies have a tried & tested recipe for a diabetic-friendly cake please ? Whilst I realise that cake, being pretty much carbs (& fat) is not exactly the foodstuff of choice for a diabetic, I'd like to be able to offer a visiting friend a possible choice

I can obviously google loads of recipes, but I'd appreciate it if anyone could share a recipe that they've already tried.

    Try this: Slimming World Syn Free Roulade.
    You need 4 eggs, a 250g tub of quark (it is a very low fat cheese usually on bottom shelf near cottage cheese) and sweetener (approx. 4-5 tbsps.) plus flavouring (I like lemon flavouring) but you could use any you fancy.


    To make you separate the eggs, whisk the whites, mix the yolks with about half the quark plus half the sweetener. Add flavouring to the yolk mix. Fold in the whites, and whisk up to get more air into the mix. Pour into a swiss roll tin, cook for approx. 25-30 mins at gas mark 5. Allow to cool slightly, mix the remaining quark and sweetener together add flavouring (doesn't have to be same a sponge). Spread the quark mix over the swiss roll. Add some fruit (check with your friend if they are avoiding any) if you like. Carefully roll up the sponge, trim off the ends and you will have a low carb, low fat, sugar free cake.

    As a diabetic I have been told that sweetener is worse than sugar, so I will not use it.
    It is perfectly ok for a diabetic to have a small slice of sponge cake or a fairy cake.
    I just cut the sugar down by an ounce or two(25g/50g) and add extra vanilla extract or a bit of lemon zest

    TBH there is a lot of controversy about sweeteners atm . I gave up sweeteners 15 years ago. It was tough at the beginning but once I did it, I cant stand the taste of sugar in tea et. Everything tastes different.


    As the previous poster said, have a look at the diabetic site to find a nice recipe. It doesn't make any difference between Type 1 and Type 2- except Type 1 needs insulin and Type 2 uses diet and medication to control their insulin levels. Both need to watch their sugar levels.

    Our bodies are not geared up to recognise artificial sweeteners, so we store them as fat. Sugar, however is excreted in our pee.

    I have an emergency hypo kit that I carry and it has a bottle of full sugar Pepsi and a bag of jelly babies. The hospital advises lucozade but I find it too sickly so full sugar pepsi was agreed on.

    Low blood sugar is a problem with insulin dependent diabetics

    Does your diabetic friend want to eat cake?

    I've changed my diet a lot since being diagnosed and am still controlling my blood sugars through diet alone. It has meant reducing the sugar/carb content of what I eat to the point where I don't really like sweet things any more.

    I wouldn't consider a friend offering cake a very 'friendly' thing to do.

    Depends on whether it is T1 or T2 diabetes and the method of dealing with it.

    It isn't just the actual sugar you also have to take into account the carbohydrates in the flour. and any fillings such as jam or buttercream.

    Artificial sugar tastes vile, is a chemical mess AND a fabulous LAXATIVE!! You may just be sending your friend home with a runny bum and an extra half a stone! lol. It fools your body into thinking it is getting real sugar and your body compensates for real sugar and finds it lacking so throws a tantrum and wants to store every scrap of fat and glucose molecule it can get its cells on.. With T2, often a factor in developing it is being overweight this is NOT a good thing!


    Just use a recipe which gives a carb breakdown and your friend can counter it with whatever medication they take. Or just ask if they WANT cake.. I'd rather have beans and toast!

    Xylitol is a fab alternative, just substitute sugar for the same amount of xylitol. Can buy it in health food shops

    My son is a T1 and I never use artificial sweetener in cooking or baking, as has been posted before, just use a recipe with a carb breakdown and your friend can calculate how much insulin to use.
