Organising a Hen Night

Hi all,
I, along with one other, are currently trying to arrange a hen do for the autumn (sept/oct). We have been given very little guidance really from the bride.
Complications include a geographically widespread set of friends (including 1 in Europe who will fly in for the hen do), and friends with small children (1 only nearing a year old). Some people only want to do 1 night, others are happy with two. Some people are very restricted on costs - how do we manage this without putting the bulk of the cost (i.e. more than their share) of those of us who are organising?
Does anyone have any advice for planning an event that would be inclusive for all these people? We are looking at a cottage in the Cotswolds, probably a country walk and some crafty activities and a pub lunch type weekend.
At the moment we're struggling even to find a date, so any alternative suggestions would be very much appreciated!
