Help me use up courgettes, mushrooms and sausage meat

Hello All,

I went a big mad with the yellow sticker shopping, and I have loads of courgettes and mushroom. There's just the two of us, so aiming to batch cook and freeze. I have done a mushroom bolonese, can't think of anything else.

I also have beef sausage meat, that I don't know what to do with. I'm not a big meat eater, was thinking of a meat version, and a vegetarian version using the the mushrooms. Of what I really don't know.

I have a good larder of stuff, and am a big fan of the KISS method (Keep It Simple (for) Stupid) :rotfl:

Ideas please.

    I made a normal bolognaise yesterday. Whizzed up half a floppy courgette, a bendy carrot and a big handful of mushrooms. Added those to the sauce. It was so good. Used some for tacos, some for moussaka, spag bol, and jacket spuds.

    Really easy meal I've been doing lately is a sausage tray bake. I cut sausages in half and put in baking tray with new potatoes (halve them if they're big ones) and whatever veg available. This week was pepper, courgette, mushrooms, onions, garlic and then some asparagus thrown on top towards the end. Just put it all in a roasting tray, sprinkle/spray with oil and season plus a few herbs (I used dried thyme).


    You could make little 'meatballs' from the sausage meat, use courgettes and mushrooms and anything else available.


    Depending on how much sausage meat you've got: I'd freeze them in 'meatballs' for adding to pasta. Courgettes (sliced) and mushrooms will freeze. they're not brilliant defrosted but perfectly OK for adding to casseroles.


    There are other brilliant recipes. For example I love Turkish mucver

    I've only had it in restaurants but mushroom stroganoff is relatively simple too.

    We love courgettes sliced with sliced onion and mushroom fried in butter.
    Mushrooms sliced will freeze.
    Sausage meat will freeze. Or use for scotch eggs, fried patties, sausage rolls.
    Courgettes you can use like pasta sheets in lasagna.
    What quality did you buy?
    Why pay full price when you may get it YS ;)
  • Mushrooms and Sausages are easy. Put Snorkers under grill, fry mushrooms and add a fried egg. I am afraid, the courgettes, are heading for the compost heap!

    Fry mushrooms and courgettes, (plus a shallot or some bacon if you have) add creme fraiche and parmesan for the perfect pasta sauce. You could make sausage meatballs and put them on the top or freeze them.

    I'd either do a variation on this, slicing the mushrooms and adding them to the filling

    Or thinly slice the mushrooms and courgettes, cook the sausage, add it to a red sauce and layer into a lasagna.

    I've never frozen them but don't see why you couldnt once the patties are formed.

    And I would whip up a bologna use base sauce with the rest of the mushrooms and freeze.
