What to do with it other then crumble?

Rhubarb in one hand and a cone of sugar in the other (ah, them were the days )make the most of it, we are only here for the weekend.

Lyn,( Mrs Lurchwalker) last year made a lovely rhubarb breakfast jam, I am sure if you asked her, she would give you the recipe

tarts, pies, turnovers, toasted sandwiches, rhubard and chips, rhubarb spam and chips, egg rhubarb spam and chips.. :-)breathe in, breathe out- You're alive! Everything else is a bonus, right? RIGHT??0

Breakfast Jam
3lbs rhubarb chopped small
3lbs sugar (granulated is fine)
1 lemon
1 lime
1 orange
1/2 pint of water
put the rhubarb and water in a large pan with the juice from the citrus fruits and then pop the shells in too. Bring to the boil and simmer gently until the fruit is mushy and broken down. Add the sugar and keep stirring until it doesn't 'crunch' on the bottom of the pan and is all melted into the fruit. Bring back to the boil and simmer until it reaches setting point. Take out the lemon, lime and orange shells and discard. Pot up while still hot in sterile jars and pop the lids on while it's hot.
makes about 5 lbs.
Tastes a bit like marmalade, that's why it's 'Breakfast Jam'! Hope you like it, Lyn xxx.0 -

I eat stewed rhubarb with plain yoghurt & muesli for breakfast some days.

I like stewed rhubarb on porridge for breakfast. If you have the Hummingbird cookbooks, there is a nice recipe in one if them fir a rhubarb loaf. I also noticed a recipe for a rhubarb tray bake in the Scotsman magazine today, so will give that a go.0
