Spiralizer/Zoodle recipes

Has anyone got any good recipes for spiralized vegetables?
I bought a zoodle chef a few months ago and have so far only spiralized courgettes to use in place of pasta and cucumbers to add to salad. I can't think of any other vegetables that are either round enough or soft enough to use, would aubergines work? Carrots would be too hard surely?
I don't really like the taste of zoodles on their own, they're fine if they're covered in tomato sauce but I can't think of any other sauces to use with them. I'm not a very good or creative cook and as much as I love my spiralizer I'm out of ideas

There was an article in yesterday's Daily Mail, with some recipes. Apparently you can use carrots, also butternut squash and sweet potatoes.0
