Help - Cakes and biscuits to freeze?

I'm struggling at the moment to get the time for my usual baking - and the kids are not impressed! Does anybody have some good recipes for cakes and biscuits that can be frozen? That way I could make double for those weekends when we have sports events and I have no time! Thank you

    Most cakes freeze well such as sponge cakes gingerbread etc. How about making some muffins if you are short for time?

    You could make up any biscuit/cookie dough, roll it up in cling film to make a sausage, chill it for a bit and then slice into rounds.

    If you freeze them uncooked you just take them straight out of the freezer and pop into the oven when needed, allows you to control how many you cook at one time too.

    All sponge cakes, fruit cakes, buscuits can be frozen. With sponges just leave out the filling. I find that pastry goes a bit hard if you are not going to have it hot.
  • MSE famous Twinks biscuits freeze beautifully. I like to have a couple of takeaway container boxes in freezer ready for unexpected guests. Hth xx

    The fat in cakes and biscuits helps them freeze well so go for it. If you use rectangular traybakes or loaf tins (for fruit cake, lemon drizzle etc) it will maximise space better than round cakes.
    I have one of Mary Berry's cake books and she is a great advocate of freezing baked goods, esp for portion control. As pm2326 says, you can freeze rolls of biscuit dough and then cut off and bake as many as needed. Added bonus is that you get the smell of baking when visitors come over and they think you're a domestic goddess for finding time to bake for guests :D
