Coconut rice pudding sounds nice
Should I just put coconut milk into normal milk? Use less normal milk?

As I'm on Slimming World I don't often use coconut milk but when a recipe calls for it I only use 100ml. The other 400mls I freeze in a large silicon muffin tin (each one holds 100ml). When frozen solid I turn them out and put into a plastic bag in the freezer.
When I do another recipe which requires coconut milk I just defrost one of the frozen blocks.
