How to use up thick coconut milk?

As above. I've got half of tin, what to do with it?

Coconut rice pudding sounds nice :) Should I just put coconut milk into normal milk? Use less normal milk?

Use instead of normal milk add some water maybe. There are details on vegan type websites. My daughter made some.

As I'm on Slimming World I don't often use coconut milk but when a recipe calls for it I only use 100ml. The other 400mls I freeze in a large silicon muffin tin (each one holds 100ml). When frozen solid I turn them out and put into a plastic bag in the freezer.

When I do another recipe which requires coconut milk I just defrost one of the frozen blocks.
