How to succesfully freeze spring onions (salad onions) so that they don't go 'mushy'?

Hi

Have bought some reduced! :j large spring onions (aka: salad onions!).

They are sized more like leeks than the thin spring onions I have seen for years; I didn't know they made them that size (u learn something new every day! ;) ).

Which is great for VFM, but not - of course - if I can't find a use for them, & have to bin them!

So: can I freeze them? Being high-water content (I assume!) I fear they will go 'mushy' :( if I just freeze them as they are; so I was wondering if I should chop them into chunks & put them in ice cube trays??

Has anyone tried this??

    I would think they would be too mushy for salads but you could use them in a stir fry etc..

    I've frozen home grown spring onions by chopping them up, spreading the slices on the chopping board and open freezing for an hour or so, then putting in a freezer bag(well, two as they can still the freezer out a bit!)

    They're fine in stir fries etc but I rarely eat them raw anyway, too many complaints from OH!

    Stick them in the salad drawer of your fridge, with a layer of kitchen roll at the bottom of it. I've bought leeks, spring onions and other veg reduced to a few pence before and have done this and they have been fine for weeks afterwards. Just make sure you give a wipe to the veg before putting it in if there's any moisture on it and that the salad drawer is clean and without condensation first.
