    It does take a while - but is definitely worth the effort - I make a mushroom risotto using a mix of dried porcini mushrooms soaked and fresh mushrooms with garlic and Shallotte's - its lovely but does require undivided attention for about 30 mins - but so many combinations once you have the basics! £1 for 1k of risotto rice is great - need a trip to Lidl!

    I dislike risotto - creamy pulpy rice - bleurgh!
    But I do like rice dishes which keep the rice, well, rice like, rather than porridge.

    Risotto is Italian for rice!
    The rice itself should still have consistency and not be mushy; the Italians call it "al dente" which means "to the teeth", and sort of sums it up.
    You can check how it's cooking by tasting it from the pan from time to time.
