Hi guys
Im going to do a roast chicken and thought might be good to curry the leftovers for a meal.
Ive got a naan bread recipe to try but would love a chicken curry recipe, something not very spicey or creamy but with lots of nice flavour and not too difficult to make either. Im a fan of mild rogan josh packed with lots of fresh ingredients but dont know of any recipes even slightly similar to this.
Then im stuck for rice as I dont have a clue how to cook anything other than plain rice. I would love to cook coconut rice but hasnt turned out right before.
Also would be lovely to have some kind of accompanyment, maybe some samosas. Anyone got any nice fillings for these? I was planning to make with filo pastry as recommended on tv the other day.
Any help or suggestions appreciated!

I make onion and cumin rice. Fry a finely chopped onion in a little butter til soft and then turn up the heat and add 2 tsps cumin seeds. Then add rice (I work on 2oz per person) and toss in the butter. Then add boiling water at the rate of 2floz of water per 1oz of rice (so 16floz for 8oz of rice). Put the lid on and bring to the boil. As soon as it boils, turn the heat down as low as possible and leave for 10 mins. Don't stir or take the lid off. After 10 mins there should be no loose water in the pan. Take the pan off the heat and either eat immediately or leave for 5-10 mins - it will stay hot with the lid on.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

I must be blind, I can only see one recipe there for curry and not really the kind of thing I want unfortunately.0

I made coconut rice the other day, it was delicious. I gently fried off half a chopped onion in some oil and then added some spices (peppercorns, cardamom pods, cinnamon stick - basically anything that looked right from my cupboard lol). I cooked these off for a few minutes and then added a pinch each of salt and saffron, and an (American) cup of basmati rice. I stirred this round a bit then added a tin of coconut milk, and some water - sorry to be a bit vague but it wasn't much, just enough to cover the rice. I found that I did need to add a little more water during cooking.0

Erm... I cheat
and buy Patak's rogan josh curry paste - in a jar you get at least 4 meals for 4 out of one jar if you don't want it too spicy.
Or I get a Patak's balti paste which is fairly mild and tomatoey (when you add the tinned tomatoes as it directs on the jar)
