recipes for haddock please?

Hi everyone I have got 3 packets of haddock in my freezer not sure how I got so much but I have no idea how to cook it? I know you guys are fantastic at recipes I have googled but dant find anything without expensive ingredients which kind of takes away the point. I was thinking pasta risotto? Thank you for any help everyone :)

    Keep fish simple. Try this ...

    POACHED WHITE FISH

    Serves 2

    INGREDIENTS

    2 x 250g fillets of white fish
    1 onion
    250ml of milk

    METHOD

    Rinse the fish under cold water. Remove any excess water from the fish with some kitchen paper. Run your fingers along the fish and remove any remaining small bones with your thumb and forefinger or a pair of tweezers.

    Peel the onion and chop it into tiny pieces.

    Put the fish, milk and onion into a frying pan on a medium heat. Cook for 10 minutes until the fish is firm and opaque.

    ADDITIONS AND ALTERNATIVES

    Add a bay leaf. Remove it before serving.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

    Baked fish. Chop some tomatoes that are past their best and put in the bottom of a dish.
    Place slices of fish on top.
    Then top with two slices of bread made into breadcrumbs mixed with some lumps of feta cheese and an egg. Add olives if you want.
    Bake for about 35 mins.
    Serve with whatever you want.

    Another favourite of mine but I prefer smoked haddock for this.
    Poach the fish and drain. Top with cooked spinach that has been mixed with a little creme fresh. Top with grated cheese and bake for 15 mins.

    Fish stew. Lightly fry a small shallot. Add paprica and chilli flakes. Pour on some tinned chopped tomatoes the flavoured ones are good. Add white wine if you wish, let it reduce and bubble gently for about 10 mins. Then add your fish. You can add it frozen. And cover the pan if possible, the fish takes at the most 15 mins, you can add prawns, mussels, other seafood, chickpeas, peas, green beans, cooked potatoes, herbs.
    Serve with crusty bread.

    Fish curry? But I would have to use a jar of sauce because I'm rubbish at making spices for a curry work for me.

    Try this ...

    FISH CURRY

    Serves 2

    INGREDIENTS

    300g of white fish
    1 clove of garlic
    2cm (1 inch) piece of fresh ginger
    2 onions

    200ml of milk
    50g sachet of creamed coconut
    1 tablespoon of oil

    ¼ of a teaspoon of chilli powder
    1 tablespoon of garam masala
    ½ a teaspoon of ground turmeric


    METHOD

    If you are using fresh fish, rinse the fish under cold water. Remove any excess water from the fish with some kitchen paper. Run your fingers along the fish and remove any remaining small bones with your thumb and forefinger or a pair of tweezers. Remove the skin from the fish. Chop the fish into 2cm (1 inch) pieces.

    Peel the garlic and chop it into tiny pieces. Peel the ginger and chop it into tiny pieces. Peel the onion and chop it into thin slices.

    Warm the milk in a saucepan on a low heat or in a jug in the microwave. Add the creamed coconut. Stir until the coconut has dissolved.

    Put the oil into a frying pan on a medium heat. Add the garlic, ginger and onion. Fry for 3 minutes until it is golden. Stir frequently to stop it sticking.

    Add the chilli powder, garam masala and turmeric, milk and coconut, and the fish. Stir thoroughly.

    Bring to the boil, then turn down the heat until it is just boiling. Cook for 20 minutes until the fish is firm and opaque.

    ADDITIONS & ALTERNATIVES

    Use 200ml of coconut milk instead of the milk and creamed coconut.

    The quantity of chilli powder above makes for a mild curry. For a medium curry, increase this to ½ a teaspoon. For a hot curry, increase this to ¾ of a teaspoon. For a very hot curry, increase this to 1 teaspoon.

    I do a really quick and easy Mediterranean fish bake - put your frozen fillets of fish in an oven proof dish and pour over a tin of tomatoes. Stir in some lazy garlic and chilli and add chopped Mediterranean veg ( whatever you have to hand - peppers, onions courgettes all work well) Bake in the oven at about 180 degrees for about half an hour or until the fish is cooked. Sprinkle with grated cheese when it comes out of the oven
