Question - electoral role & temporary move in with relatives

Sorry for som many questions recently. I'm due to move out of my returned accommodation next week and am temporarily moving in my with grandmother whilst my partner and I proceed with buying our first home.

So I have a few questions about this:
I am on the electoral role at my current rented address. Bearing in mind an upcoming mortgage application should I:
a)stay on the electoral role at my rented address where I have resided for 3+ years. The risk is that my flat mate is remaining in the flat and may deregister me (she wasn't exacly pleased that she's had to find a new flatmate)
b) register at my grans - however she recieves single person discount on council tax and has told me that if I'm only staying for a couple of months she doesn't plan to inform the council (I'll add that she's perfectly able to make this decision and understands she should inform them - I've even already offered to pay the increase but she has declined this -if I register on the electoral role won't the council pick this up?)
or c) register at my parents address where I have no credit history


In the middle of all of this what should I do with all my bills ect? (I didn't want the hassle of informing everyone so was planning on just paying Royal Mail to redirect them to my partners or parents or grans place). However that means all my bank statements ect will still have my old rental address on them.

    I am going through exactly the same situation at the moment with a few more complications added in! Our mortgage adviser has told us to just redirect our mail for a month which is more complicated that expected as you have to cancel all your bills and the council have already got on to us regarding the electoral roll! we have no idea where to go on this either so any advice would be fantastic!
