pizza toast ~ lightly toast bread, use mix of ketchup and tomato puree, add cheese, sprinkle with mixed herbs ~ pizza!!

cheese and cranberry sauce ~ works really well as a use up post christmas.

Beetroot curry ~ or beetroot/courgette in cakes.

brussels sprouts with mint sauce is a favourite of mine too

This post has made me remember, as a kid we had an au pair (Czech, I think) who used to send us to school with cold broccoli/sprouts and ketchup in a sandwich.

My sister hated them, but I actually quite liked them. Definitely an inventive us for leftovers...:rotfl:
