Hi JillD - I'll try to remember what I shoved in the roast (don't do 'measured' recipes apart from the occasional delia pudding)
Cooked red lentils (about 2 cups - i imagine any kind of lentils would work)
breadcrumbs (about a slice worth)
half a jar of pesto (this was a storecupboard emptying kind of roast)
1 egg
cooked rice (about a handful)
salt and pepper
roughly mix and bung it in a greased loaf tin - I cooked it for about 40 mins (until the top was springy, not sticky) at about 170
Pop Up - yes, I'm veggie (although my OH is an ex-veggie omnivore) so the household is pretty much meat-free. Also I really can't stand the smell of cooking meat, so if he wants his fix he has to sneak the occasional burger while he's outOr collude with my meat-eating father 6 miles away to be over at his place at dinnertime!!
