Length of self-employment

How many years worth of self-employment earnings do lenders need to see as a minimum? I'm seeing websites that mention 3 years, but we've only been self-employed since July 2013.
I'm also in full-time employment with around £55k gross salary, but our self-employment brings in around £12k p.a also, so we would like to add that to the pot.
I take about 5% of the partnership earnings and my wife takes the rest. We don't use an accountant so I gather that SA302 will do.
Also, I've had a recent promotion just last month. My previous salary was £50k. Do I need to wait a few months to get payslips that confirm the salary increase? Or would they just take the new contract and figures?
Thanks in advance for any advice or info.
