Hi WantToBeSE, how has the rice gone? still alive? did you store it in the fridge? I really wanted to have bento for lunch next week but im terrified (unnecessarily) of the rice so would love to hear your experience please :)

  • You can only store cooked rice for about 24 hours without running the risk of it developing an organism (I don't know its name) that can give you a nasty tummy upset, in the fridge that is. I believe it's fine to cook and freeze rice as long as you use it up within a day of defrosting, hope that helps, Lyn xxx.

Personally, for the last year after I've cooked rice I just leave it on the hob for several days with the lid on and use as needed. I always end up cooking too much.

I have never come to any harm. Just an anecdote granted.
  • how do you cook quinoa? I bought a packet, but it doesn't have cooking instructions and I can't seem to find any on google! Thank you :)

Totally fine, still alive :D I made some on Sunday and it lasted fine until last night (ran out then) so made some more yesterday and currently eating some of that. Made vegan sushi bowls this evening with it and it lovely!

I tend to use 3 times the amount of water to quinoa. So if i use 1 mug of quinoa, i use 3 mugs of water.

You need to rinse the quinoa thoroughly before cooking, as the outer shell is bitter and not nice. Just put in a sieve and rinse until the water runs clear. Bring to the boil and simmer for 15-20 mins.

It is quite bland tasting on its own (similar to cous cous), so while cooking, add your flavourings to the water it's being cooked in. I like to add some vegetable bullion, or curry powder.
