Hi guys,
I have limited funds and am catering for 60 people at a party. I have estimated the following but until I actually make the sandwiches I don't know exactly how many a loaf will make.
How does this sound?
56 chicken pin wheels
40 ham sandwiches
40 cheese sandwiches
40 egg mayo sandwiches
40 tuna sandwiches
120 sausage rolls
80 pork pie bites (mini pork pies quartered)
66 mini sausages and chicken satay sticks
72 mini quiche
150 chicken nuggets
72 vol au vonts
150 indian/chinese snacks (samosa, bhajis, spring rolls)
2 bowls of rice salad
2 bowls of pasta salad
2 bowls of salad
120 profiteroles
120 desert platter (like icelands party ones)
oh and jam sandwiches for the little ones

A medium sliced loaf should yield 20 slices and 2 crusts. (Prepacked not instore bakery bread) (the crusts get turned into mini treacle tarts hereabouts).
I've found pin wheel sandwiches far easier to do with tortilla wraps.
Have you tried quartering the mini pork pies? When I tried it I ended up with lots of bits rather than neat quarters - it may well vary depending on brand. (or my clumsiness on the day)
I'd be wary of rice salad - keeping rice at room temperatures can be a recipe for disaster, I'd substitute either tabbouleh (bulghar wheat) or couscous.
Are you looking at making things or just baking off? (I'm not having a go, it just changes some suggestions that might or might not be useful)
Quantities look reasonable, however I think you're a little light on sweet stuff especially if there's many kids around.0 -

Spud salad is cheap/liked by many. Lots of varieties, spuds obviously, then combinations/options of:
- with/without chunks of white onions
- with/without chunks of red onion (for a different look)
- with salad cream - or - with mayo
- curried, or plain
- with chives, without.0 -
People who know say to cater for 75% of your guests otherwise there will be a lot of food waste.
I catered for 150 for our last party and ended up sending people home with masses of leftovers!0 -
I agree with the potato salad suggestion.
It's one of the things I'm asked to do if I go to a party.
I also do a good coleslaw and also redslaw (radish, red onions, red cabbage, beetroot).
What's the mix of invitees?
Oldies? Kids? Teens?
You could do some crudit!s and buy some dips, most supermarkets do value ones and maybe provide a couple of bowls of Dorito-style chips.
Younger people tend to like stuff like that.
Satay sticks? Anyone have a nut allergy?0 -
