Olivia Salad

I have a young student from Kazakstan, today his mum was making 'Olivia' salad. It sounds good - and moneysaving.


In a dish she had four boiled potatoes and four boiled carrots. She was going to chop them up. They will then be mixed with mayonnaise, chopped pickled cucumbers, cooked meat (Irena said beef or lamb. Then she said you can use sausages (her favourite), ham and the recipes I googled said chicken.) She had 8 hard boiled eggs and a tin of peas that will be mixed in last.

I think it can be made very economically. I intend to make it on Friday for a picnic at an outdoor play.

    This is very similar to what they call "Russian salad" in English (the Russian name for that salad in fact sounds very similar to Olivia).
