Mince in meatloaf - recipe help needed.

Hi
After a shock at the vets this morning I need to get creative and figured you guys are the ones to help me. I'm catering for 12 people on Friday night as a birthday present to my best friend. Now I was going to make a meatloaf for part of the food as friend has requested it but have no mince. I'd like to get away with not buying any if I can.
In the fridge/freezer I have
2 x diced pork
Multiple chicken breasts
1 x chorizo
1 x pancetta bits from th'Aldi
Various bits of lamb
My question is I've only ever made a meatloaf from beef - would it taste ok being made out of pork? And is it possible without a mincer to turn diced pork into meatloaf appropriate pork? Would lots of chopping do the trick?
Or can you think of a simple dish I could do with the ingrediatns above? This is the meat element of the meal - I've already frozen an aubergine lasagne, doing mac n cheese, fondant new pots, bowl of salad. So either a traybake or cook ahead tasty type thingie.
