The concept of non-vegetarian cheese hadn't occurred to me before, so thanks to everyone who mentioned that- you learn something new every day!
I personally recommend cous cous with whatever veg/salad you have around (made with a veg stock cube for extra flavour). if you're using veg, just fry or roast it gently before mixing it in, for extra flavour.
Also anything with hummus-a stall on Leeds market does a hummus sandwich, which is their budget friendly sandwich. They also do an amazing falafel wrap, and they spread hummus on the wrap before wrapping the falafel into it. Delicious.
I am a 'part-time' vegetarian, so definitely echo the sentiments of making sure you make a bit more veggie food, as the omnivores will eat veggie too (who doesn't love an egg sandwich?)Make £2025 in 2025- £751.88/£2025

Im veggie too and I hate when people put the meat or fish sandwiches on the same plate as the veggie ones as it suggests things may be contaminated with meat
I work for a sustainable development charity and we always specify veggie only buffets for meetings
Bowls of nice salads are good, if you are providing plates and forks, stuffed leaves - you can get dolmades from Tesco, of lettuce cups stuffed with a veggie filling
Quiche, veggie or cheese pasties, veggie sausage rolls, mini pizzas, delia Christmas book has some good ideas - alumettes, cheese and onion rolls, mini puff party tarts with tomato and olives, olives, tapas style dishes like Spanish tortilla, roasted salted almonds, little bowls of sundried tomatoes and cheese like feta.

I am not sure how much you want to buy or make, some of these you could buy in, some would have to be made:
Indian snacks such as bhajis, samosas etc
Chinese snacks such as veg spring rolls
Cheeses- a few sorts but obviously for the more strict veggies be wary of the rennet
Pizzas/Pizza Rolls
Crisps/Tortilla Crisps
Veggie platter (carrot, cucumber, cauliflower, peppers) and/or breadstick platter and dips (a few different ones) and pickles/chutneys (a few different ones)
Fritatta or pastry-less quiches
Rice salad
Cous Cous Salad
Carrot Salad
Coleslaw
Potato Salad
Chickpea salad (with peppers and a nippy sauce)
Pasta Salad- tomato or creamy
Sarnies
Veggie sausages- Quorn do Veggie Cocktail Sausages (they also do lovely Vegetarian 'meats' though you may want to avoid these if it causes confusion!)
Savoury breads (garlic bread, olive bread, spicy cheese bread)/
Lentil pate, Kidney Bean Pate
Pickled onions, beetroot, cabbage
Boiled eggs
Grapes/Melon/Orange slices
Plenty of dressings, pepper, etc

I'm a vegan and have to echo some of the sentiments here that it's horrible when mixing veg and none veg food on a platter. I end up in the awkward position of 1) do I seem ungrateful for the obvious lovely effort the host put in for my minority dietary requirements. Or 2) do something I am uncomfortable with. For years I avoided this situation because of this and I swear some people thought I had an eating disorder! Lol.
Same with utensils they get served with as well. It's not fun to pick up my veggie stuff with something that just picked up greasy dripping ribs lol. Oh and I echo the other sentiments that meat eaters wolf down the veggie offerings!
Other buffet foods for veggies from a vegan angle
Green olive tapanade (some have fish in, most don't)
Loads of veggie pates - mushroom, chickpea, carrot, walnut, often available at health food stores.
Coleslaw/potato salad made with egg free mayo or extra virgin olive oil and lemon juice.
Flavored seitan, sliced (sandwiches) - search YouTube for the VeganZombie's philly 'steak' sandwich for a good seitan recipe.
Cold nut roast, sliced (sandwiches).
Houmous and roasted pepper (sandwiches).
Houmous, grated carrot and falafel (wraps).
Antipasti.
Sauerkraut and other fermented veggies.
Roasted veggies.
Eggless quiche.
Vegan ciabatta pizzas (homemade garlic and herb tomato reduction poured on a sliced ciabatta, baked with tahini sauce on top as the 'cheese' (tahini, soya milk, lemon juice, salt).
Falafel.
Tahini sauce dip.
Nuts.
Dried fruits.
Veggie sausages - Linda McCartney are available in supermarkets.
Bombay mix.
Veggie/Lentil mini pasties made with JustRoll puff pastry - which are labelled vegan.
Endless crisps!
Vegan sushi.
Edamame pods.
Wakame salad.
Awesome retro crudit!s.
Bhajis.
Samosas.
Rice salad.
Oatcakes and crackers for pates and dips.
Tortilla and guacamole (made dairy free).
Salsa.
Stuffed vine leaves.
Fried plantain (best when fried with virgin coconut oil!).
Salads.
Cookies and biscuits.
Strawberries served with a dusting of icing sugar.
Oh and I also serve my buffets with mini vegan trifle! Love me some vegan mini trifles. I have to make extra as I generally consume many before the event.

A big couscous / bulgar wheat salad always goes down well. Or you could go retro with a Philadelphia, grapes and cracker comboValue-for-money-for-me-puhleeze!
