For the soft cheese - I'm assuming here that you mean cream cheese/Philadelphia cheese, not brie or camembert type cheese!
Use to make a fab dessert - stew Bramley apple with a bit of sugar and very little water. When it's soft, take off the heat and stir in the soft cheese. It will melt and make the apple deliciously creamy. I put the mix into ramekin dishes and serve cold.
I also add soft cheese to bolognaise sauce, liver and onions, and to simple pasta and pesto for a quick lunch. Don't knock it till you've tried it!!No longer a spouse, or trailing, but MSE won't allow me to change my username...0 -
I would make sure you roast them well at first, and i'd add extra herbs or cheese, as they are less tasty than aubergines.0
