Banana Cake

8oz flour
2oz butter / marg
2oz sugar
2 over-ripe bananas
1 egg
pinch of salt
bit of milk

Rub the butter into the flour, add the pinch of salt. Then add the sugar, mashed up bananas and egg. Mix and add enough milk to make a sticky consistency.

Place in a greased & floured loaf tin and bake at gas mark 4 for 45 mins.

Found this on the recipe section on here, but.... is that s/r flour or plain flour?

    It must be SR flour as there's no baking powder or bicarb in that cake to make it rise.

    Have just found a very similar recipe on another website.

    But it has bicarbonate of soda. How important is this as it wasn't in the original recipe?

    I was looking for other recipes that had some nuts in and the new one with bicard has walnuts.

    Bicarb usually works alongside something acidic like lemon juice or vinegar. IIRC it can't make a cake rise on its own. So if the recipe doesn't have anything acidic in it and it only calls for bicarb not baking powder as well then there's probably something wrong with the recipe.

    You can just add nuts to whatever recipe you're making without needing to change the amounts of anything else.

    I used this one last week and it was lovely

    90ml water
    grated zest and juice of a lemon (I didn't have this, squeeze of jif instead)
    2 ripe bananas
    175g unsalted butter (but I used salted)
    175g caster sugar
    3 eggs
    225g SR flour
    1/2tsp baking powder
    1/2tsp ground cinnamon (missed this out)
    200g ready to eat dates chopped

    This one I use regularly and is gorgeous!




    BANANA CAKE


    4oz butter or margarine
    6oz caster sugar
    8oz self raising flour
    2 eggs
    2 large or 3 medium, very ripe bananas



    2 teaspoons honey


    ¼ teaspoon cinnamon

    Heat the oven to gas mark 4; 180C
    Grease a 2lb loaf tin.
    Mash the bananas with a sturdy fork.
    Cream the butter and sugar together and mix in the eggs



    Add the honey and cinnamon
    Mix together the two yellow sludges you now have.
    Mix in the flour.
    Scrape into the loaf tin and bake for 40 minutes then lower the temperature to gas mark 2; 150C and cook for a further 30 minutes.



    I also sprinkle the top with demerara sugar before putting in the oven.
