Hi All,
I am on a very tight week this week as I am sure many of you are and there isn't any money left in the pot untill I get paid next Friday
There isn't much left in the cupboards for packed lunches however I do have lots of eggs, caster sugar, self raising flour and some blocks of chocolate left over from Christmas. However I am short on butter/margarine and the small bit I do have I need to keep back for sandwiches and toast.
Does anyone have any recipes for treats or anything bread based that doesn't need butter? I do have olive oil and hazelnut oil in the cupboard.
Any help would be very much appreciated

I'm sure my mil does a bero sponge cake without butter which is really light. Will have a look see if I can find it in my book.0

I use applesauce. If you have some soft apples sitting around just peel and core them, chop into largish pieces and cook a bit of water in the microwave or hob. Drain then puree and substitute the same measure of applesauce for butter/oil/margarine.0

I also use applesauce. If you can find 40p down the back of the sofa or rattling around the car, you can buy the Tesco value one.
Or, this recipe uses no eggs or butter, so you can keep the eggs for other things0 -

Thanks for this it is perfect although can I substitute the all purpose for self raising?
Also white vinegar? I have white wine vinegar, rice vinegar and normal malt in the cupboard?
I do have a jar of applesauce in the cupboard so thanks for that idea everyone.

Yes, I do believe you can use self raising instead of all purpose, you will just need to leave out the salt and baking powder in the recipe, as I think SR already has baking powder and salt mixed in.
I have never owned white vinegar - I think such a small amount in the recipe would be okay to sub with either the wine vinegar or malt (I have curdled my milk with malt before when a recipe called for white), or lemon juice if you have any. Although somebody with more experience may correct me!
