Baked Potatoes go Grey

Yesterday I cooked a baking potato (4 mins in microwave then finish off in oven). It looked OK before cooking, but when I cut it open, it started slowly going grey at the edges.
This has happened before with supermarket baking potatoes, but not with (puts on sexy voice) Marks and Spencer baking potatoes.
Anyone else have this problem - and is there any way to avoid it?
