Buy to Let & Remotgage Help Please?

My Partner and myself would like to move in together, in to the house one of us owns and for the other person to keep their house as a buy to let.
Ive looked at the money and am confident we can remortgage one into both names and get a buy to let for the other.
However, my confusion and question to the forum is, in what order should we approach this? or can a mortgage broker do both at the same time?
Ive read somewhere to get a buy to let mortgage the applicant needs to own a home to live in as well (which neither of us would until we are both named on the other mortgage) but if we try to remortgage one into both names first will the other not yet being a buy to let impact the amount of money we can borrow.
I hope that makes sense. Its my new years resolution to sort this out. Thank you.
