And I know quite a few schools dont' do cake sales any more because of the H+S.0

If a BG wants to move it - then your welcome, but I have posted this before! (cant remember where though)
I use a food processor asit saves the mixing/chopping etc! Ive known friends do this by hand also!
Here goes:
2 eggs
1/2 (half)tea spoon ground cinnamon
1/2 (half) tea spoon bicarb soda
2 medium carrots, peeled & roughly chopped
185g butter/marg (i use vitalite) - melted
3/4 cup sugar (white or brown can be used)
1 cup of s.r flour (can us wholemeal also, works better with brown sugar)
1 cup of sultana's (optional)
or if you want to add walnuts, then add 1/2 cup & half cup of sultana's.
in the Food processor place the eggs, soda, cinnamon & carrots, whizz until a thick liquid is formed
add the melted butter & sugar
whizz
add flour, (fruit & nuts if your adding them)
whizz untill combined
place into a loaf size tin (i use 2 x 1lb loaf tins)
bake in moderate oven (gas mark 3) sorry, dont know number for electric, for about 50mins, or until cooked in the middle, by checking with a skewer.
You can use a butter creamed icing for the top, but the cake never lasts long for me to do this!

could you get around the health and safety implications by asking for a donation? (with the suggested donation being £1) so that you are not technically selling?weaving through the chaos...0

big trays of chocolate rice crispie cake or cornflake cake. Top with glace cherries and serve big slabs for £1. Very very quick to make.

As far as health and safety is concerned, the 'rule of thumb' is:You don't need to register or be inspected if you cook to sell occasionally, and you don't do more than 5 days in 5 weeks.BUT the regs changed in 2006, and my sources are abit unclear as to how this will follow through, but I reckon that baking for an event like this will go pretty much un-noticed in the general scheme of things, as long as you just selling to friends/colleagues/family.0

Might be a bit late - not read whole thread so sorry if has been suggested already but chocolate brownies would sell well! Cheap to make and everyone loves chocolate!!!

Flapjacks are really easy and cheap to make, just oats, butter or marg, sugar and golden syrup all mixed up and tray-baked. Then cut into about 8-10 squares per tray, and sell for maybe 2 for £1.
