help with cooking lamb

I've got a bit of "lamb shoulder fillet" -it says in the label- for xmas dinner. What's the best way to cook this please?

Slow roasted with garlic, rosemary, red wine, lamb stock. For an average shoulder (2kg ish) 180 fan assisted.
Pierce lamb with a sharp knife tip, poke in a sliver of garlic with rosemary about twenty times.
Put in oven to brown, after about ten minutes reduce to 120 and pour over wine and stock. Turn every so often when you check it. Lamb will take at least two hours. It should be a deep brown and well done. Put the lamb to one side to rest and make a gravy with the roasting juices.
You can either serve really traditionally with roasted roots and mint sauce, or go for something more like a Mediterranean salad with feta, aubergine etc.
Two kilos will easily serve four with plenty of leftovers for something like a shepherds pie.0 -

I thought you said a bit of shoulder fillet. That will be totally lean and nothing like an entire shoulder. Could you clarify the weight etc. please Ma. I like lamb to taste of lamb, not garlic, not rosemary, not anything.
Just slow roast it..... heavan.make the most of it, we are only here for the weekend.

It's fillet, it's tender, it needs very little cooking time.
You can cut into noisettes, and simply pan fry as you would steak or even make a Wellington Or to roast, sear in a hot pan and then oven cook
Seriously treat it as you would fillet steak and aim for pink0 -
It's from Costco and its 1.5kg. Says "lamb shoulder fillet", I want to cook it all at once and freeze some for later. Am getting hungry reading this thread and it might not see xmas ....0

I agree with Suki1964 and treat it like beef fillet. I know I have only cooked this once and the instructions were on the packaging and although it wasn't as much as 1.5kg it was certainly a very quickly cooked cut. I agree, nothing would be worse than looking forward to a special meal and it turning out inedible. It happened to one of my friends in Scotland but because she ran out of credits for her electricity with the turkey only partly cooked. Her husband was working, she didn't drive and nobody else could help her out as we didn't pre-pay as she did.
