Ideas for party food with gestational diabetes

I've been asked to help organise a surprise baby shower for a friend who has gestational diabetes.
Can anyone help me with some ideas for buffet food? Ideally I would like the guest of honour to be able to eat everything on offer, but still present a spread of food that's appetising for her guests.
Am I right in thinking it needs to be low-carb, low- sugar food? I've been researching recipes but a lot seem to use peanut butter, almond flour - I'm not sure if pregant mums are supposed to eat nuts though?
Any suggestions gratefully received

As a diabetic, I have been told that I can eat whatever I like within reason, 1 day off is not going to do too much damage, but saying that I prefer to go for high protein at a party, things like chicken, ham, meatballs, salads, cheese, nuts, boiled eggs, crustless quiche and plain sponge cake or chocolate sponge cake can all be eaten.Blessed are the cracked for they are the ones that let in the light

And apparently now pregnant mums are encouraged to eat peanuts, a few years ago they were forbidden!0
