    My brother does similar soup but with matzo meal balls?? Apparently instructions are on the matzo meal packet for making the dumpling balls - he cooks them in the soup - but I haven't tried this yet. ;)

    the reason soup goes thick the next day is the natural gelatine from boiling up the carcass...when it's heated it goes thin again.

    I sometimes like to poach a chicken. Cover it with water, add peppercorns, carrot, onion, bayleaf and just simmer for about an hour.

    Strip off the breasts to eat as "roast" chicken (you don't get nice coloured skin - it looks a bit anaemic but that is where gravy comes in) and then pick through the other meat and you'll find it seperates from the bones easily.

    It's best done like that for a pie, stays lovely and moist and you find all the gristly bits as you pick through.

    I make a chicken and spinach lasagne one day and the dark meat works really well for that - it's got the most flavour.

    If I roast a chook I use my Mum's microwave that does dual cook, roasts as well as microwaves and does a large chicken to perfection with crispy skin in 45 minutes!!

    I bought a chicken yesterday 3.25. From it I have made chicken and mayo rolls for lunch, a chicken bhuna, chicken and chickpea curry and an chicken pie and and the soup is on now:D bargain or what
