defrosting turkey and storing it in fridge

I will be having a frozen turkey for Christmas dinner this year. I am worried that it will still be 'frozen' in the middle when time to cook it. (I have defrosted one in a large bucket of water before when it had ice inside !). I followed the defrosting instructions on the packaging i.e. x number of hours in the fridge but it was still not defrosted after that time. Maybe fridge is too cold????How long can you keep a defrosted turkey in the fridge/cool garage?

Easy to follow guide here: http://www.nhs.uk/Livewell/Healthychristmas/Pages/cooking-turkey.aspx
If you're thawing it in the fridge, you need to work on up to 24hrs per 5lb...I think.0 -
There's no way, mine would defrost properly in our fridge, OH insists on it being set at 1 degrees. I had ours thawing in a cooler part of the kitchen last year - still all in its plastic wrapper. I checked the external temperature regularly though to make sure it wasn't getting too warm.Over futile odds
And laughed at by the gods
And now the final frame
Love is a losing game0
