One of our fast freezer meals is to take a frozen bag of rice with sweet corn and peas, stir fry according to instructions, add whatever fish we have available well flaked (tinned mackerel is nice but I've also made it with baked cod or smoked salmon offcuts etc etc) stir it all up and chuck some cut up cherry tomatoes on top for decoration. (Sometimes I add chopped boiled eggs too - like kedgeree - but you can't have those atm.) Could you experiment with something like that, making the rice base from scratch if you have to use wholegrain or want to add other veg?

My advice would be to learn how to make a really nice risotto - with proper risotto rice, a good stock cube, a bit of butter (or oil), finely chopped onion, etc. using the slow method, adding a bit of stock at a time to get a really creamy risotto. THEN you can add to it whatever you can eat to vary it - add cooked chicken; cooked fish; extra vegetables, etc. Alternatively, use bog standard long grain white rice and create different types of "paellas" using different mixes of chicken, fish, veggies, etc.
