Preserves with apples

I was thinking apples, cider vinigar, sugar & chilli (flakes for prettiness & chilli paste for punch) would make a good preserve.
I've already made it once with water instead of cider vinigar & I had to throw it away, far too sweet & I used too much water it was like soup!
Do you think with a little cider vinigar might be good?
Any similar recipes?
I've seen some that require straining the apple. To be honest I think that's pretty wasteful & sounds fiddly too, I'd rather make use of the whole fruit.

I was going to do the bottom one by AWT but the straining put me off, I thought it wasteful.
I could do either of the other two & skip the spices, maybe add extra chilli:T
