I was wondering if anyone new whether we'd be breaking the rules by buying a ticket for a further destination but only completing part of the journey?
We're looking to travel from Watford Junction to Wembley Central this evening...but it's actually cheaper to get a return ticket to West Brompton, which stops at Wembley Central on the way. Which seems odd to me, but it would save us some money!

It depends on the ticket
In your particular case - an off peak day return at £7.30 presumably?? - yes it should be legitimate. Break of journey - and therefore stopping short - is allowed.
What I'm not 100% sure of is whether you have to use the Southern service or whether the Overground is acceptable0 -
A bit late now, but what you wanted to do is perfectly fine. An off-peak return allows you to break your journey en-route.
A London Overground or Southern service could be used, it doesn't matter as the route is exactly the same.
The anomaly is caused by the Wembley fare being set by London Overground, but the West Brompton fare being set by Southern. However neither ticket is operator specific.
However, the most money saving thing to do would be to use Oyster cards or contactless credit/debit cards. The journey is £1.60 each way. There is a £5 refudable deposit for an Oyster card, but no deposit needed if you use the contactless payment card.0
