Quitting job before mortgage completes

I'm in a bit of a sticky situation. My mortgage (in N. Ireland) was approved ages ago but is taking a long time to complete.

I'm currently living in another country and had hoped to return to N Ireland to live by Christmas - for this to be the case I would have to hand in my notice by this Friday, and work out my notice until 19th Dec. This would also allow me to take up a locum job in N. Ireland on the 29th Dec. However my mortgage will probably not have completed by this Friday, so I'll end up handing in my notice before my mortgage is completed.

Jobs in my field are extremely hard to come by, and this locum post may well be my stepping stone into permanent work, so I don't want to scupper it.

Does anyone know what the chances are of the lender carrying out a last-minute employment check on me? Do they do that in the UK?
