Fudging hell!

I need some help with a fudge recipe. I'm sure some of you can help!
I want to make fudge for Xmas hampers. Just had a go at a basic chocolate fudge, all was fine until it came to taking it off the heat and beating when it split.
Tried returning it to the heat and mixing it back together but as soon as it began to cool again it split.
It's in a tray in the fridge cooling to see if it will be usable but I have serious doubts that it will be.
I've made fudge before, a few years ago, and not had any trouble. Don't want to hav a go at another batch until I've looked into recipes and what might have gone wrong.
Can anyone help??

If you buy condensed milk ,Nestle, there is a recipe on the back which I find works well0

Make basic plain or vanilla fudge to begin with, and be very careful about temperature.
Chocolate can be the devil when it melts - a slight change in temperature, different kinds of fat and % of cocoa solids can all conspire to make a mess.
Once confident with vanilla, you can try chocolate again, and be very careful both with temperature and with any specifics.
Otherwise, fling some choc chips in the vanilla.0 -

Thank you. I have more cream to use up on another batch, if that works/doesn't wrok I'll have a go wih the condensed milk.
Guess I was too ambitious with the chocolate one. I did baileys, white chocolate and xmas cake fudge last time, all worked well so thought the chocolate would work as well.
