HSBC sold my debt!

Then my advice would be to do just that - wait until you hear from them. I assume that you were told to do this in writing.
The additional delay may assist you in bringing you closer to the time when you will be able to make a Full and Final Settlement offer.
The letter from HSBC says "You will be contacted by one of their representatives shortly to discuss your account and how to repay..." but it also says at the end 2You can call them on ... to make arrangements to pay."
Should I also, when/if they do contact me, write to them asking for proof that they do actually own the debt now?

I would send them a letter saying that you will only deal with them in writing from now on, that any further telephone contact will be regarded as harassment and that you want a copy of your CCA (must incl a £1 PO for this) and a Copy of the Notice of Assignment to MCS/Robinsons or whomever is dealing with the debt.
You make the CCA request under ss77-79 of Consumer Credit Act 1974.
Always write at the top:
"I do not acknowledge any debt to your company"
