Taleggio - how long will it keep?

Hi guys
I bought some taleggio and used a bit last week. I'd like to finish it up next week (OH doing a strange diet so cannot use this week
)
The pack says to only keep 3 days after opening. I'm happy to ignore this and normally just trust my gut instinct on food, but as the cheese smells so strongly anyway, will I know if it smells off? How long do you think it will be ok for?
Thanks

If you're planning on cooking it, you could chuck it in the freezer."We always find something, hey Didi, to give us the impression we exist?" Samuel Beckett, Waiting for Godot.
