Meal plan WC 2nd Nov

I have been meal planning for a full year now and it has saved me a fortune :j
Sunday- Gammon dinner with HM yorkshire puddings
Monday-LO Gammon to make carbonara
Tuesday-HM corned beef pie, chips and peas
Wednesday-Bacon jambalaya
Thursday- Chicken curry with turmeric rice and HF prawn crackers
Friday-HM pizza and garlic bread
Saturday-Spam fritter, hash browns and fried eggs
Breakfasts will be weetabix, toast and porridge with dried fruits.
Lunches will be any left overs, bacon and mushroom quiche or chicken noodle soup. I'll make the soup today.
Snacks will be HM flap jacks, fruit and I'll make some fairy cakes.
Have a frugal week

I had a £10 off £50 sainsburys coupon, but as I spend much less than that I've decided to do a two week running mealplan and stock up on cat food - total spend £42.05 (incl. delivery), plus I'll get £1.50 cashback...so a free bottle of cider for my pork!
Monday - Away (with work) to the Peak District, so a meal at a lovely hotel will be included. OH will eat freezer meals and DD at granny's.
Tuesday - Squash and courgette tagine with saffron cous cous (need to use up squash and courgette, so will cook today and freeze 'til then)
Wednesday - Weather permitting, having a bonfire (just pruned apple trees). Veggie hotdogs, caramelised onions, HM rolls...beer!
Thursday - HM pizzas with peppers, onions, mushrooms, olives.
Friday - At a friend's house
Saturday - OHs parents coming over:
Main - Slow-braised pork shoulder with cider and parsnips, and sticky spiced red cabbage, with HM rolls
Pud - Microwave lemon pudding
(all of the above BBC Good Food recipes)
Sunday - Lentil and vegetable curry
WEEK 2
Monday - Root vegetable and red onion tagine with quinoa
Tuesday - Jack Monroe's Peach and Chickpea curry, w/basmati rice
Wednesday - Lentil Spaghetti
Thursday - Chicken leg and lentil curry (loosely based on jamie's yellow curry, but with lots less meat!) Going to joint a chicken (for the first time!) and use the legs for this
Friday - Out to eat

Pud - Peach cobbler
Sunday - Chicken and spinach Massaman curry
Breakfasts: With our own chooks and a breadmaker we have a steady supply of eggs and bread...

Did some shopping yesterday and still trying to reduce stocks in the freezer
Today, roast beef, veggie sausage for me, HM yorkshires, roast pots and parsnips, cabbage and leeks, carrots, mashed swede and peas
Monday - cold beef, salad, and wedges
Tuesday - fish. mash with herby philly, veg
Wednesday - pasta with tomato sauce
Thursday HM curry and rice with HM flatbreads
Friday not sure yet maybe HM pizza

Breakfasts for me are porridge, cereal or poached eggs on toast, OH doesn't eat brekkie.
Lunches for OH are cheese and pickle sandwiches on HM bread (he may get a slice of ham in there if I'm feeling generous) and for me mainly veg based lunches.

Not in order but my meals for today-next Sunday:
YS roquefort & onion quiche, YS goats' cheese & onion tart with YS ratatouille & roast potatoes.
Butternut squash bisque with homemade YS ciabatta croutons.
Fajita seasoned chicken (Quorn for me, YS for OH), peppers, broccoli, mushrooms & baby corn served in YS baked poatoes with sour cream & salsa.
Sizzling beef (soya for me, YS for OH) with YS spring onions in a black bean sauce served on coconut rice.
YS spinach & arborio rice soup.
Mushroom, YS potato & pancetta (real for OH, meat free "bacon" for me) gratin served with YS salad.
Sweet potato & butternut squash dauphinoise served with meat free sausages for me & caramelised red onion meatballs for OH. Will also serve with any leftover veg, probably broccoli & babycorn.
Out for lunch with my parents on Sunday so not planning a meal, we'll probably just have a snack in the evening.0 -

Monday - LO sliced beef cooked in gravy, mash, peas and carrots
Tuesday - Gammon, egg, chips and beans
Wednesday - chilli con carne, rice/nachos
Thursday - LO chilli with Jacket spuds and veg
Friday - husband- sausage and mash, me - veg stir fry with udon noodles
Saturday - Spanish chicken and rice0 -
Sun – out, pulled pork
Mon – bagels, pulled pork fajitas or Yorkshire puddings filled with pulled pork changed to savoury rice with pork
Tue - bagels, chicken kiev with butter nut squash
Wed- bagels, smokedsalmon pasta
Thursday- pasta salad, turkey strips with pea risotto
Fri - pasta salad, quiche changed to pork chops with red cabbage. Have put slow cooker on to make spicy butternut squash soup. Need to look for red cabbage recipe.
Next week ideas. Depending what is left over after our guests have gone - mushroom and spinach crepes, meatballs and pasta, bacon and mushroom pasta, pork fajitas, stir fry pork, risotto, ratatouille, courgette pesto pasta. I have just worked out that I have been meal planning for around 5 years!!! It has definitely saved me a fortune, but more so has saved my sanity, I don't think I can cook "off the hoof" any more!!! In fact I couldn't unless we had ingredients in the freezer as I don't have "spare" food.
Anyway this week
Monday - Chickpea & apricot Korma & rice
Tuesday - Sausage, mash, gravy & veg
Wednesday - Nasi Goreng
Thursday - Pasta with either sundried tomato or arrabiatta sauce (choice)
Friday - Chicken Dansak, rice & naan
Saturday - Roast Chicken, roast & mashed potatoes, braised red cabbage, veg.

Last weeks plan changed slightly towards the end of the week, so I must try harder, although it will be a bit all over the place as I'm out at various places.
Monday - I'm off to give dry slope skiing a try tonight so my dad has said to pop in for dinner on the way, I think he's doing chilli
Tuesday - [STRIKE]possibly going to the local firework display, so will either get something there, or i'll have soup when I get home[/STRIKE] My dad gave me extra chilli and rice to take home, so I had that
Wednesday - [STRIKE]possibly going to the cinema?! If not, i'll do cheese omelette with potato wedges/croquettes and beans[/STRIKE] I did go to the cinema, but ended up having a 'car picnic' beforehand - scotch egg, mini sausages...pretty rubbish really
Thursday - [STRIKE]pasta with sundried tomatoes and pesto with garlic bread[/STRIKE] Had jacket potato with cheese

I will be feeding 2 adults and 2 hungry teenage boys. The men in my life seem to think a meal isn't a meal without meat.
