Well, food plans are now completely askew - I have decided just to use up whatever I have in stock rather than stick to a plan now that I am almost unemployed.....It's going back to the principles of the 'don't throw food away' challenge that I used to take part in, so there are bound to be a fair few random meals coming out of the kitchen!! :rotfl:
I have cooked far too much of the lemon oil beans and mash so will freeze some of the beans and make potato cakes out of the remainder (I will add herbs, onions and perhaps some chutney to them before cooking);tomorrow I will serve the potato cakes with a fennel, orange and date salad (still have some leftover), salad leaves and the lemon sole that we have in the freezer.
I also have a job lot of pasta sauce using up lots of stuff from stores (carrots, onions, celery, tinned tomatoes, tomato puree, capers, black olives, white wine, basil, thyme - I will add caperberries and feta to it just before serving) which we will have tonight and I will freeze the rest for another day.
I have soaked, cooked and frozen job lots of chick peas, cannellini beans and kidney beans and also bought a few packs of frozen veggie mince, sausages, hot dogs and 'chicken' style pieces for quick meals as they were on offer. I bought three whole chickens on the 3 for £10 deal too as this will cover a number of meals for the familyI will stock up on toiletries etc tomorrow when I go into the city with my daughter and then that should be it for the rest of the month :T
I have started to weed the garden today - hard work!! :eek:However, the swiss chard that I planted has been rediscovered now that the butternut squash has gone, so I will be able to get some fresh greens for most of the winter!I am going to get the dead stuff removed from the garden by the end of the weekend and then I will start to build the framework for the beans ready for the spring.
I also realised the other day that I still haven't used that sewing machine that my friend has loaned me - once I have finished weeding the garden, I am going to get organised with that; I want to get some linings done for my curtains from some old clothing I have in the spare room - it will be nice to have that additional warmth and will hopefully reduce the heating bills a bit!!
Okay, general waffle over
MF stuff is nothing really to report - I am going to work out a realistic target for next year based on me not working for 12 months. It will be dramatically smaller than it has been for a while, but I figure that even if I can only overpay by a few quid month, it will still chip away at it until I am in a better position financially. I am a lot happier than I have been in a long time - although I did have a bit of a wobble this morning about the decision I have made!!I think its just because my last payday is tomorrow and looking purely at the figures there is such a scary difference in income it's quite breath-taking!! :rotfl:
However, the real reality is, nothing in our funded lifestyle will change - the only difference is the mortgage payment and overpayments.Being out of work for a while is not a major issue within the big scheme of things - as soon as I am back in it, all of my salary will be going towards the mortgage so this is more of a hiatus than a change of plan

I have found it quite difficult to be back at work this week - having a break really reminded me of how much the job is wrong for me! However, I found the days went reasonably quickly and I am now a quarter of the way through my notice - I am sure that the next few weeks will probably fly past quickly and I will then be able to really concentrate on getting myself sorted in the way I want to
I am having a lazy morning this morning - still in my jammies at the moment!!This afternoon, I will clean the house up, get the laundry done, clean out the fridge and walk the hounds.
I am hoping that tomorrow will be a decent day so that I can get out into the garden and attack the weeding!! I have still to get the broad beans in (found bindweed in the previous compost I was planning to use and kept forgetting to get more) and clear all the dead plants out of the bed and greenhouse. I want to get as much done as I can before the weather really turns

After much soul-searching, I have decided to close this thread and no longer have a diary on the mfw board
The reality is, even since starting this thread, my life has changed quite dramatically, I have had to have a complete re-evaluation of where I am heading over the next twelve months, and my goals in my life are very different than I expected them to be at this point!!
I will still be on MSE - my new goals include living frugally but well; unfortunately, my income just means that paying down my mortgage is not going to be an option for a while, so it's time to put the mfw diary to bed for the time being!!
I will still lurk around the mfw boards though and want to thank you all for the support you have shown me over the past few years.....if it wasn't for the encouragement I have received from you all, I wouldn't currently be in the enviable position I am in - I am very grateful....thank you!!Mortgage 12.12.12 £55842 12.12.13 £42716 14.12.14 £28837 13.12.15 £25913
