If you don't know all of the numbers and can't or don't want to file online, just fill inn the tax return with estimated numbers and tell HMRC in the notes or an accompanying page what numbers are estimated and that you may need to adjust them later. Saying why and what sort of range the adjustment might be is useful also. This way HMRC has some idea of your situation, you avoid the fine and you can correct it as needed later.

And don't forget all 281 Enquiry Centres were closed at the end of June so you can't get face to face help that way or hand in your return in person on deadline day. Any help required will have to be online or through the helpline which is bound to be busy near the deadline.
