Any ideas for other uses of sandwich filler?

I've just bought a YS spicy mexican chicken - a sandwich filler I presume - since it's chopped chicken mixed with fajita sauce and tomato salsa in mayonnaise.

I don't particularly want to use it as a sandwich filler.

Anyone got any other ideas?

Anyone know if it will freeze ok? (I doubt it with the mayonnaise.)

I'd thought perhaps I could use it with a baked potato.

    You could use it cold in a salad.

    Heat it up and serve it in a pitta bread or heat and serve on top of an omelette.

    Thanks for the ideas, Smoosh and Soworried.

    I probably shouldn't have bought it but when it was 9p. instead of 1.35 it was hard to resist - and I knew I could always use it for sandwiches as a last resort.

    There's only me to cook for so it will make 2 meals - 1 tonight and 1 tomorrow.

    Mix it up with some celery, chopped onion and chopped tomato then wrap in a tortilla and pop under a hot grill for a couple of minutes each side.

    a filling for an omelette?
    I was going to suggest buying some soft tortilla wraps and spreading the filling over one then topping with another and so on until you have a short stack (about 4 -5), covering with grated cheese and baking in a hot oven - but that is far too much for one person - good for a family supper though.

    Put it between two tortilla wraps and toast to make a quesadilla.

    On a jacket potato,
    served on pasta, rice or couscous would also be nice.
    The quesadilla idea is also great.
    They are quite flexible really. And at 9p, if it's not a taste sensation then you've not wasted much, and you'll know not to buy it full price!

    Jacket potato sounds lovely or you could stir into pasta or make a quesedilla or pop into taco shells with salad and tomatoes or salsa
