Vegetarian + Puff Pastry + Parmesan Recipes?

I have about 50g of parmesan and a packet of puff pastry that need using, plus storecupboard stuff, veggies etc. Any ideas (must be vegetarian, can buy other cheap ingredients from local co-op)? Freezable/Lunbox-packable would be a bonus.

Hi Lightisfading - dont have a recipe but just to say that parmesan cheese isn't vegetarian. You can buy special stuff thats veggie and does a similar job. I get 'Twineham Grange Farms Italian Style Premium Cheese' which lasts for ages. Thought I'd better mention it as not sure if its a meal for someone who might not appreciate eating animal products?0

As i already have the tub I won't throw it away (as i've already contributed that money to the industry, chucking the product in the bin won't help) - I won't be buying it again though!0 -
You can apparently freeze parmesan either grated or entire and just use what you need when you need it.
I've no recipe but parmesan, marscapone or ricotta with a little pesto and maybe pine nuts all mixed together is a tasty mix. I've done it to sandwich mini choux buns together before. Maybe cook the puff pastry in little squares and plop the mix on top? They might survive a luch box journey!One debt v 100 days Part 14 £400/£400

make a ratatouile recipe, roll out the pastry and make filled squares; bake and they'd be perfect for lunches. Just sprinkle with parmesan cheese either inside or on top.0

As you already eat diary, the production of which involves the death of young calves, I think it makes no difference eating cheese made with rennet, which is a byproduct of the industry.
Not wanting to a start an argument or having a go at anyone - just informing. Before anyone asks, I'm an omnivore who would like to go veggie but if I did I would have to go Vegan so this very reason. Not sure I could l do that. Maybe when the boys have left home.NSD 0/150
