Hi Busy Mee!
I think it was probably this one:
Lemon Curd Cake
100g margarine
75g castor sugar (i use granulated)
2 eggs
175g self-raising flour
1 jar lemon curd
Heat the oven to 180 degrees. Grease /line a loaf tin
Mix all of the ingredients in a bowl and mix together till binded.
Then pour the cake mixture into the loaf tin and level the top so its straightish.
Place in oven and bake for approximately 40 minutes until browned.

Thank you so much - you are an angel ! I will have a go this weekend and let you know how I get on.
I have been experimenting a bit - made a lovely apple tray bake last weekend using yogurt and oil (ran out of butter and marg). I got given two carrier bags full of cooking apples, so will probably make that again too0 -
This sounds interesting, will try it soon."'Cause it's a bittersweet symphony, this life

I love this recipe by Kidcat and have made it many times..it's brilliant!..so easy and deeeelishhh!
I think Kidcat also suggests another version.. instead of Lemon Curd, adding [FONT="] cocoa and marmalade as a chocolate orange cake. Not tried this yet, but intend too!
Enjoy!

This is the same recipe I use and its fab.
Instead of lemon curd we also use jam, nutella, sole sauce etc
Its very versatile and easy to cook
Enjoy0 -
Not tried Jam yet but this is mega when done with a jar of marmalade, not tried adding cocoa too though next on list! My poor hubby is never gonna lose any weight!0

I gave this recipe along with the Jamaican ginger cake recipe to my son. He had to make two loaf cakes for an afternoon function at his uni. One of the professors consider themselves very knowledgeable about food and were highly impressed with his bakes. He didn't tell them how easy they were to make nor that one was a jar of basics lemon curd.0

I saw Rosemary shreager recently do lemon curd icecream with a jar of lemon curd, yogurt & creme fresh0 -
Wonder if this would work in the slow cooker. I did an Aunt Bessies lemon cake in slow cooker and it came out fab, may try this Lemon one now. I pop it all into a baking case inside a silicone mould with about a cupful of water in the bottom. Comes out lovely.SPC No. 295 - SPC No10 target £350
