Illustrative income from Pension funds ignores inflation?

Generally speaking - do the "projected" examples of income after retirement remain non adjusted for inflation?

Depends on the assumptions that have been chosen to preduce that example illustration. The assumptions used are explained in the example. If you receive a formal projection on a specific pension product, either at point of sale or some other time before retirement age, then it needs to be adjusted for inflation.
If it's an income drawdown projection though, it can be either in real terms or nominal terms.
But there's no specific rules for pension calculators or other online tools.0
