Is it possible to make a decent soup without using onions, garlic or leeks??
My DD is following the PAC diet(eliminating certain foods due to IBS)and we eat lots of homemade soup, but I always use lots of onions and leeks.
Any suggestions gratefully received. Also, can you get stock cubes that don't have onion?

Knorr Chicken stock pots certainly don't have onion in them.

With the exception of leek & potato soup, I never put onions in soup. A few sticks of finely chopped Celery is excellent for adding flavour to soups and stews.
A good vegetable soup is:- chop up a mixture of vegetables (your choice/anything that you have left in the fridge no matter how small or old!) add stock, bring to the boil and simmer for 30 mins (I have a pressure cooker which is a great time saver). Use a blender (a cheap stick blender is absolutely fine) and you have a delicious creamed vegetable soup.
With a pressure cooker you can make stock from a left over chicken carcass in 20 mins. and freeze it until you need to use it (it can be added from frozen).
Nearly every soup that I make is with chicken stock, unless I have a bone left over from a roast Lamb or Beef joint.0 -

Thankyou. I usually stick an onion or two in with my meat bones when making stock, so I've got to re-adjust my thinking.Celery is allowed, so I'll try that.0 -
So, I'm thinking-
Celery, carrots, butternut squash, tomatoes, pepper and potato, with stock. Maybe some swede or turnip.

A WI recipe called no onion soup (it's courgette and carrot and very nice)
2oz butter
450gm courgettes sliced
450gm carrots
850 1.5ptpt chicken stock
4 bay leaves
s & p
soften veg in butter
pour in 1pt stock, add bay leaves s&p, cook 20 -30mind until soft
remove bay leaves, blend0 -
mushroom soup is made without onion. and you can use milk instead of stock to give you 'cream of mushroom' soup.0
