Maternity mortgage issue

I'm currently in a 3 yr fixed rate mortgage with Platform. It has 2.5yrs left to run & will revert to a much higher tracker rate.
We've recently had our first child and my preference is not to return to work.
I earn 50% of our income and although we can afford the repayments with my partners salary alone a lender would not allow us to borrow as much as we'll need based on his salary alone should we shop for a more competitive rate in 3 yrs time.
Does anyone have any advice to help me to avoid returning to work to secure another fixed rate in 3 yrs time?

Your only option will be to choose and accept from whatever products Platform offer at the time. 3 years time may see a different landscape with regards to interest rates. So while you consider the follow on rate to be high. May be nearer the norm. As interest rate levels over the past 5 years or so have been abnormally low. Affordability will assessed at 7% on new mortgage applications.0
