Stand Mixer Question

Good evening!
I have just got a kenwood propspero stand mixer which is great because I make cakes as a hobby. I also make shortbread and scones on occasion. My question is, when making shortbread, I cream the butter and sugar then mix in the flour but end up squashing it together by hand - so would I use the dough hook on the stand mixer for this? Or just keep using the beater bit? Because obviously it ends up in dough ball which needs rolling out!
The book states the beater attachment for cookies and biscuits but sometimes those can be quite sloppy recipes.

When I make shortbread I just bung it all in together TBH. The K beater on my old Kenwood manages it just fine.0
