blue cheese - recipe help

I have a block of danish blue cheese in the fridge that I'd like to use up this week - can anyone suggest a main meal recipe I could use it in

  • Stuff chicken breast with it.
    Broccoli and blue cheese soup.
    Make a cheesy pasta sauce for pasta.
    Stuff field mushrooms with pât! and top with the blue cheese, cook in oven and serve with salad and crusty bread.
    If all else fails, cut into smaller pieces and freeze.
    Hope that helps a bit.

    not sure what you call this - but its simply 2 or 3 sheets of filo pastry, brushed with melted butter or oil, stacked together and then spread thinly with either tomato puree or marmite or maybe even anchovy paste (or whatever you have to hand) the blue cheese crumbled on and the whole thing is rolled up like a swiss roll, brushed with more melted butter or oil then baked in a medium oven until golden.
    Ive made a few versions of this and its delish for a main meal or you can slice it thinly for party food.

    Buffalo chicken wings with a blue cheese dip
    Blue cheese and beef pie
    Grown up cauliflower cheese

    Mixed veg, like broccoli and cauliflower , cook, make a blue cheese sauce and bake in the oven.

    Make it into a pasta sauce

    Blue cheese, pear and walnut salad

    Blue cheese, fig and Parma ham

    Blue cheese and mushroom sauce over steak or chops

  • Whatever you end up making, go very easy on the salt, as Danish Blue is already quite salty.

    I'd use it in a macaroni cheese, but with other cheeses as well, so that it's not too overpowering. I use what I have to hand, but maybe some cheddar, mozzarella, blue cheese, gouda or edam.

    Beautiful for stuffed mushrooms with a slice of tomato and some crumbled blue cheese.

    Makes a great dip for serving with anything!

    Broccoli or cauliflower soup with blue cheese.

    Great on a pizza, again with other cheeses.
